Fillets with sausage, tomatoes and manouri

Ingridients
- 250 grams of string beans
- 4 spoons of Sirreon olive oil
- 1 village sausage
- ½ onion sliced
- 200 grams of cherry tomatoes cut in half
- 180 grams of manuri broken with your hands
- 2 spoons of chopped parsley
- Salt
- Freshly ground pepper
Execution
In a pot of salted water, boil the florets for 5-6 minutes until they are al dente. When they are ready, strain them and cool them under plenty of running water. On a cutting board with a sharp knife cut the country sausage in diagonal slices, and the onion in slices. Place a deep non-stick pan on a high heat to heat well and add the Sirreon olive oil. Saute the country sausage until it renders its fat and gets a good color. Add the onion and continue sautéing for another 1 minute, sprinkling with salt and freshly ground pepper. Add the plums together with the cherry tomatoes and continue cooking for another 1-2 minutes. Sprinkle with the manouri and chopped parsley, mix one last time and serve in large deep dishes, pouring a little Sirreon olive oil on top and some freshly ground pepper.
