The olive is a favorite food of the Greeks and a key component of the precious Mediterranean diet. In fact, the olive is the fruit of the olive tree. 75% of olive fats are monounsaturated fatty acids, which contribute beneficially to the functions of the human body. The consumption of monounsaturated fatty acids in combination with the tocopherols (vitamin E) contained in olives have antioxidant properties and offer protection against cardiovascular diseases, strokes and cancer. Olives also contain 4-6% carbohydrates, significant amounts of vitamin E, A and carotenoids. The minerals and trace elements with which the olive supplies us are calcium, copper, iron, manganese and zinc.
